The last couple of weeks of spring it has been colder than normal and we have had some crazy weather…From snow to even a tornado near my neck of the woods.
We are all safe fortunately from that crazy tornado. But this weather is still being so dreary and cold. When it is cold my always go to meal is grilled cheese and soup. It is one my favorite comfort meals to make. I change the soup from time to time and depending on the weather and/or season. However, with it being spring now I love leeks. Leeks have a wonderful, delicious mild onion flavor that is perfect for spring time. Potato Leek soup, sign me up!
