9 years ago I decided to apply for a Greece study abroad trip. If I got selected I would go to Greece and help promote the island through the use of video. Growing up I always loved doing videos. Figured this was a once in a lifetime experience and I thought I should definitely apply. I will be honest to say I didn’t think I would get selected. Funny how everything fell into place. My parents helped me get a passport since I would need that. I started saving back for the trip. And one day my mom mentioned that my passport came in the mail. That very same day I found out I got selected to go to Greece.
This Greece trip was a wonderful experience and I got a beautiful friendship out of it too. Veronica and I both got to enjoy everything Greece had to offer. Between the delicious food, beautiful scenery, going to beaches together and just being there for each other, having fun, creating some wonderful memories and so much more.
So, for my next blog post and with the anniversary coming up when we went I thought it was fitting to do a Greek inspired meal and to include Veronica in it and reflect on our wonderful time in Greece.
Well, folks are you ready to make an adventure to Greece?
Ingredients:
Meatballs:
-2 Pounds of Ground Turkey
-1/2 of a cup chopped spinach
-1/4 of a cup chopped parsley
-Salt and pepper to taste
-1 Egg
-1/2 of a cup of seasoned bread crumbs
-1 tsp of dried oregano and cumin
-Zest of one lemon (Forgot to include that in the video)
-4 oz of feta cheese
Tzatziki Sauce:
-1.5 Cups of Greek full milk yogurt
-1 Garlic clove
-1/2 of a cucumber grated and drained
-Juice of half of a lemon
-Salt and Dill to taste
Assembly:
-Pita Bead
-Meatballs
-Shallots
-Spinach
-Feta Cheese
-Tzatziki sauce
