First off, I want to apologize for not doing any food blog posts within the last 4 months. Simply put I had a job that promised a full time career and the work environment got incredibly toxic. But looking back on that things have a funny way of working out. It may not be how we planned or expected or heck even wanted it to work out a certain way. But it always works out in the best way possible.
I was given a choice to continue my cake decorating path that I am on or choose a new path and be a vet receptionist. Well, in the end I chose the cake decorating path and I am at a new store, new environment, new coworkers and bosses, new almost everything. After being here for a month I found my landing and a company I can grow with and opportunities to possibly go out of the country and explore. Which I will try and apply when the time is right. Since this gal is getting married this year and still lots of wedding details to plan out, everything is coming along rather nicely. I will be honest to say there have been several obstacles I have been throwns my direction but with the support I received from my fiance, my loving parents, his parents, and my MOH these obstacles are becoming less and less and found a way to work with them and not against. It hasn’t been easy to say the least but other than that my mental health has been wonderful. I got a wonderful job that I absolutely love. From the work I do and of course my bosses and coworkers make it wonderful. I am truly blessed to have that and a wonderful work life balance. Which is big for me now I can get back into doing more food blog posts, my hobbies, planning the wedding, spending time with my fiance and our fur babies, Link and Eevee. It’s the little things that looking back end up being big things.
Anyways back to this food blog post, sorry got a little carried away but just wanted to be honest and fill you in what life has thrown me the last 4 months. This food post I wanted to dedicate to my Grandma and Grandpa Casale. When they passed away we went to Luigis restaurant which is an Italian place. I know it sounds weird to go to a restaurant after someone passes but the food brought us family all together despite losing someone dear to our heart. And this place had the best penne vodka I ever had. It helped bring me comfort when I lost those I loved. And this dish brought back the memories I had with them and I know it will be a see you later than a goodbye. So, for this food blog post I decided to make penne vodka, but with a twist. And I promise you this twist was a nice touch and it is the best addition. But I won’t spoil the surprise and watch for yourself. My penne vodka folks.
