Thank you Indiana for not being able to make up your mind of being warm or cold and trying to kill me lol :D. For those that don’t live in Indiana this past week we had a 35 degree day (Friday) and then the next day (Saturday) shot up to 75 degrees. Don’t get me wrong I love warmer temps. And once we are in March I am over the snow/cold/winter yuck. However, my allergies tend to not handle extreme temperature changes very well. When this happens I have one meal I always default to making since my mom did it for me as a kid. Let me share some fun memories as a kid and then of course my favorite meal.
I remember growing up as a kid and those horrible sick days. I remember watching the Price is Right but what I cherish more is the meals my mom made for me when I was sick. When I had a sore throat and refused to take cough drops and cough syrup my mom came up with the perfect fix. Long story short, I could not tolerate the taste of them. Instead my mom would give me/spoil me with hot tea and honey. Which was wonderful because the tea was delicious and honey had a wonderful calming effect to my throat. Then if I had any stomach issues she would make me plain toast, white rice, anything plain and simple to help ease my stomach pain/issues. Finally, my favorite meal she made when I had a nasty allergy/cold spell was egg drop soup.
One could argue chicken noodle is for the soul but not me. I prefer egg drop soup just because of how quick and easy it is to make at home. And in about 15 minutes if that how quickly it comes together. This meal is my always go to whenever when my allergies/cold would flare up real bad. And the ingredients are something I always have on hand. Within 15 minutes you can whip this easy soup. Let’s get cooking and make some egg drop soup shall we? 🙂
Step 1: Beat up two eggs and set aside.
Step 2: Then in another bowl mix 1 tablespoon each of cornstarch and water and set that aside as well.
Step 3: Then in a sauce pan bring 2.5 cups of low sodium chicken stock to a boil.
Step 4: When the chicken stock is at a boil add the cornstarch mixture and stir.
Step 5: Bring that mixture back to a boil and then in a circular stir motion add the beaten eggs.
Step 6: Season to taste with salt and pepper to taste.
Step 7: This next step is optional but definitely a great addition. Add 1/4 teaspoon of garlic and ginger paste and stir.
Final Step: Pour egg drop soup in your favorite bowl and garnish with green onions.
