And this memory I will never forget and always cherish. Growing up my mom had the tradition of making cornbeef for every St. Patrick’s Day. And she made the best cornbeef and I always looked forward to it every March.
And now being an adult I get to carry this tradition with my hubby and I and I love it. From the smells of the sauteed cabbage, the sweet roasted carrots, the savory herb smell of the roasted potatoes and of course star, cornbeef.
This dish is super easy and perfect. The best part is everything cooks at 350 and easy clean up to. I guess it was all because of the luck of the Irish.
